Spring Restaurant will be closed from Tuesday August 16th through Tuesday August 30. We will reopen for dinner on Wednesday August 31.

Soirée Dégustation : Whisky Suntory 

with Mike Miyamoto, Global Brand Ambassador, former distillery manager Yamazaki and Hakushu

Join Suntory master distiller Mike Miyamoto for an evening of whisky tasting. We will be tasting on ice, and also mixing classic Japanese whisky drinks to present different styles of enjoying whisky before and after a meal.

Hubert Pien, Clos Saint Fiacre, in his Pinot Meunier vines 

Just took a peek in our wine cellar to see what wines I'm bringing home tonight - that's the best way to pick the coup de coeur. Since we're all out of magnums of Romanée-Conti and cans of Mr Pibb, I'll be heading home with wines from two wineries that start with 'clos'- Clos Saint Fiacre and Clos Capitoro. Clos Saint Fiacre is in the nearly unknown appelation Orléans, just a cherry stone's throw from Paris, where they make great red Pinot Meunier and white Chardonnay. Clos Capitoro is a bit futher away - Vermentino and sciaccarello. Come by on Thursday to taste 'em all for 5 eurobucks.

Valérie Guerin presides over a tiny collection of vineyards near the appellation Fitou. Her winemaking style is simple : low yield, excellent quality. Most of her extremely limited production goes directly to the cellars of nice restaurants in France. Valérie rarely comes to Paris, so we're happy to have her for the evening at Spring. If you haven't already hightailed it out of Paris for the weekend with half of the city, stop by and have a glass.
